- 1 medium onion, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika

- 1 can (15 oz) black beans, drained and rinsed
- 8 small corn or flour tortillas
- optional fresh cilantro, for garnish

Heat the olive oil in a large skillet over medium heat.
Add the sliced onion and sauté for about 2-3 minutes, until it begins to soften.
Add the sliced bell peppers and continue to cook for another 5-7 minutes, stirring occasionally, until the vegetables are tender.
Add the minced garlic, cumin, chili powder, smoked paprika, salt, and pepper to the skillet. Stir well and cook for 1-2 minutes until fragrant.
Stir in the black beans and cook for an additional 2-3 minutes, allowing the beans to heat through.
While the vegetables are cooking, warm the tortillas in a separate pan or microwave.
To serve, spoon the vegetable and bean mixture onto the warmed tortillas.
Garnish with fresh cilantro and serve with lime wedges on the side.
