- 12 slices baguette about 1/2 inch thick
- 8 oz goat cheese softened
- 1/4 cup heavy cream
- 2 tablespoons fresh thyme leaves chopped
- 2 tablespoons fresh rosemary chopped
- 2 cups butternut squash peeled and diced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 cup cranberry jam
Preheat the oven to 400°F (200°C).
In a medium bowl, combine the goat cheese and heavy cream. Whip together until smooth and creamy.
Stir in the chopped thyme and rosemary. Add salt and pepper to taste.
Place the diced butternut squash on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat.
