Ingredients
  

  • 12 slices baguette about 1/2 inch thick
  • 8 oz goat cheese softened
  • 1/4 cup heavy cream
  • 2 tablespoons fresh thyme leaves chopped
  • 2 tablespoons fresh rosemary chopped
  • 2 cups butternut squash peeled and diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 cup cranberry jam

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a medium bowl, combine the goat cheese and heavy cream. Whip together until smooth and creamy.
  • Stir in the chopped thyme and rosemary. Add salt and pepper to taste.
  • Place the diced butternut squash on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat.
  • Roast the butternut squash in the preheated oven for about 20-25 minutes, or until tender and slightly caramelized.
  • While the squash is roasting, toast the baguette slices either in a toaster or on a grill until golden and crispy.
  • Once the squash is done, assemble the bruschetta by spreading a generous amount of herbed goat cheese on each toasted baguette slice.
  • Top each with a few pieces of roasted butternut squash and a spoonful of cranberry jam.
  • Serve immediately and enjoy!

Notes

You can prepare the goat cheese mixture and roast the butternut squash ahead of time. Assemble the bruschetta just before serving for a fresher taste.
Feel free to add a little crushed red pepper for some heat if desired.
This dish pairs well with a crisp white wine or a refreshing sparkling water.
