Ingredients

  • 1/2 cup celery, finely chopped

Instructions
 

  • Begin by cooking chicken if not pre-cooked. Boil chicken breasts in a medium pot of water for about 20 minutes or until fully cooked. Allow to cool, then chop into bite-sized pieces.
  • In a mixing bowl, combine the chopped cooked chicken, cranberries, celery, grapes (if using), and chopped nuts.
  • In a separate small bowl, whisk together the Greek yogurt or mayonnaise, honey, lemon juice, salt, and pepper until smooth.
  • Pour the dressing over the chicken mixture and gently toss until everything is well coated.
  • Chill the salad in the refrigerator for at least 10 minutes to allow the flavors to meld.
  • Serve on a bed of greens or as is, garnishing with fresh parsley if desired.

Notes

You can customize this salad by adding ingredients like diced apples or feta cheese. This dish is also great in sandwiches or wraps. If you prefer a lower calorie option, use Greek yogurt instead of mayonnaise. Leftovers can be stored in the refrigerator for up to 3 days.
