Ingredients
  

  • 1 pound Italian sausage mild or spicy, your choice
  • 4 cups chicken broth
  • 2 large potatoes about 1 pound or 450 g, diced
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 cups kale chopped
  • 1 cup heavy cream
  • 1 teaspoon red pepper flakes optional, for spice
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil

Instructions
 

  • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
  • Add the minced garlic and cook for another minute, stirring frequently to avoid burning.
  • Add the Italian sausage to the pot. Use a wooden spoon to break the sausage into smaller pieces as it cooks. Cook until browned, about 5-7 minutes.
  • Stir in the diced potatoes and chicken broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes, or until the potatoes are tender.
  • Add the chopped kale, heavy cream, and red pepper flakes if using. Stir well to combine and cook for an additional 5 minutes until the kale is wilted and tender.
  • Season the soup with salt and pepper to taste. Remove from heat and let sit for a few minutes before serving.

Notes

You can substitute turkey sausage for a lighter option.
For added flavor, consider adding a tablespoon of balsamic vinegar before serving.
Serve with crusty bread for dipping.
