- 1 pound Italian sausage mild or spicy, your choice
- 4 cups chicken broth
- 2 large potatoes about 1 pound or 450 g, diced
- 1 medium onion diced
- 3 cloves garlic minced
- 2 cups kale chopped
- 1 cup heavy cream
- 1 teaspoon red pepper flakes optional, for spice
- Salt to taste
- Pepper to taste
- 2 tablespoons olive oil
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
Add the minced garlic and cook for another minute, stirring frequently to avoid burning.
Add the Italian sausage to the pot. Use a wooden spoon to break the sausage into smaller pieces as it cooks. Cook until browned, about 5-7 minutes.
Stir in the diced potatoes and chicken broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes, or until the potatoes are tender.
Add the chopped kale, heavy cream, and red pepper flakes if using. Stir well to combine and cook for an additional 5 minutes until the kale is wilted and tender.
Season the soup with salt and pepper to taste. Remove from heat and let sit for a few minutes before serving.
You can substitute turkey sausage for a lighter option.
For added flavor, consider adding a tablespoon of balsamic vinegar before serving.
