White Bean Dip

Ingredients
  

  • 30 oz white beans 2 cans (15 oz each), such as cannellini or navy beans, drained and rinsed.
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic minced.
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt adjust to taste.
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley chopped (for garnish).
  • paprika or red pepper flakes Optional, for garnish.

Instructions
 

  • In a food processor or blender, combine the drained white beans, olive oil, lemon juice, minced garlic, ground cumin, salt, and black pepper.
  • Blend the mixture until smooth, scraping down the sides of the processor as needed. If the dip is too thick, you can add a little water or more olive oil to reach your desired consistency.
  • Taste the dip and adjust seasoning, adding more salt, lemon juice, or garlic if necessary.
  • Transfer the dip to a serving bowl and drizzle with olive oil.
  • Garnish with chopped parsley and optional paprika or red pepper flakes.
  • Serve immediately with crackers, fresh vegetables, or toasted bread, or refrigerate for up to 2 days and serve chilled.

Notes

You can customize the flavor of your dip by adding herbs like rosemary or thyme.
Pair this dip with a selection of fresh veggies like carrots, bell peppers, or cucumbers for a healthy snack option.
For a creamy texture, consider adding a tablespoon of tahini or a splash of vegetable broth.
