Ingredients
  

  • 2 cups sweet corn kernels fresh or frozen
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika optional
  • 2 large eggs
  • 1/4 cup milk
  • 1/4 cup green onions finely chopped
  • 1/4 cup red bell pepper finely chopped
  • 1/4 cup vegetable oil for frying

Instructions
 

  • In a mixing bowl, combine the flour, cornmeal, baking powder, baking soda, salt, black pepper, and paprika. Whisk together until well mixed.
  • In another bowl, beat the eggs and then add the milk, green onions, and red bell pepper. Mix until fully combined.
  • Add the sweet corn to the wet ingredients and stir gently to combine.
  • Slowly add the dry ingredients to the wet mixture, folding it in gently until just combined. Do not over-mix; the batter should be slightly lumpy.
  • Heat 1/4 cup of vegetable oil in a large skillet over medium-high heat.
  • Once the oil is hot, drop spoonfuls (about 2 tablespoons each) of the batter into the skillet, being careful not to overcrowd the pan.
  • Fry until golden brown on one side, about 3-4 minutes, then carefully flip and cook for another 3-4 minutes until golden and crispy on the other side.
  • Remove the fritters from the skillet and place them on paper towels to drain excess oil. You can keep them warm on a baking sheet in a low oven if desired.
  • Serve warm with your favorite dipping sauce or simply enjoy them as is!

Notes

For an extra kick, consider adding diced jalapeƱos or spices like cayenne pepper to the batter.
These fritters can be made ahead of time and reheated in the oven for a crispy finish, or they can be frozen and cooked straight from frozen; just add a few extra minutes to the cooking time.
