Rinse and drain the jackfruit. Remove the seeds and cut it into small pieces or shred it using your fingers or a fork.
In a medium bowl, mix together the olive oil, chopped onion, minced garlic, ground cumin, smoked paprika, chili powder, dried oregano, cinnamon, soy sauce, agave syrup, lime juice, and salt and pepper to taste.
Add the jackfruit to the marinade, ensuring all pieces are well coated. Let it marinate for at least 15 minutes.
Heat a large skillet over medium heat. Add the marinated jackfruit mixture and sauté for about 20-25 minutes, stirring occasionally, until the jackfruit is tender and starting to caramelize.
In a separate skillet, warm the corn tortillas over medium heat for about 30 seconds on each side, or until they are pliable.
Assemble the tacos by placing a generous amount of the jackfruit filling onto each tortilla. Top with chopped cilantro and optional pineapple chunks for a sweet contrast. Serve with lime wedges on the side.
