Ingredients
  

  • 4 large onions Thinly sliced, about 1.5 kg.
  • 4 tablespoons olive oil
  • 4 cloves garlic Minced.
  • 1 tablespoon fresh thyme Or 1 teaspoon dried thyme.
  • 1 leaf bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon balsamic vinegar
  • 4 cups vegetable broth
  • 1 teaspoon sugar Optional, for sweetness.
  • 1 cup white wine Optional.
  • 4 slices crusty bread For serving.
  • to taste fresh parsley Chopped, for garnish.

Instructions
 

  • Heat the olive oil in a large pot or Dutch oven over medium heat. Add the sliced onions and salt. Cook, stirring occasionally, for about 20-25 minutes until the onions are soft and caramelized.
  • Add the minced garlic, thyme, pepper, and bay leaf to the pot. Stir and cook for another 2-3 minutes until fragrant.
  • Stir in the balsamic vinegar and cook for an additional 2 minutes, scraping any brown bits from the bottom of the pot.
  • Pour in the vegetable broth and white wine (if using). Bring the mixture to a boil, then reduce heat and simmer for about 15-20 minutes. Adjust seasoning with additional salt or sugar if desired.
  • Remove the bay leaf before serving. Ladle the stew into bowls and top each with a slice of crusty bread. Garnish with chopped parsley.

Notes

For a deeper flavor, you can sauté the onions longer until they are almost dark brown but be careful not to burn them.
Feel free to add other vegetables like carrots or mushrooms for additional texture.
This stew can be made ahead of time and reheated, making it a great option for meal prep.
