Stir in the minced garlic and ginger, and cook for another 1-2 minutes until fragrant.
Add the ground turkey to the pot, breaking it apart with a spoon, and cook until browned, about 5-7 minutes.
Sprinkle in the curry powder, ground cumin, and turmeric, stirring well to coat the turkey and onions with the spices.
Pour in the pumpkin puree and chicken or vegetable broth. Stir until everything is well combined.
Bring the mixture to a simmer, then reduce the heat and let it cook for about 15 minutes, stirring occasionally.
Stir in the coconut milk and let it heat through for an additional 5 minutes. Season with salt and pepper to taste.
In a separate pot, combine 1 cup of rice and 2 cups of water. Bring to a boil, then reduce the heat, cover, and simmer for about 15 minutes or until the rice is fully cooked.
Serve the soup over a scoop of rice in each bowl. Garnish with chopped cilantro, if desired.
