Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground turkey
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground ginger
  • 1 15-ounce can pumpkin puree
  • 4 cups chicken broth
  • 1 cup coconut milk
  • 1 cup cooked rice Preferably jasmine or basmati.
  • Salt and pepper To taste.
  • Fresh cilantro For garnish (optional).

Instructions
 

  • In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent (about 3-4 minutes).
  • Add the ground turkey to the pot, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes.
  • Stir in the curry powder, ground cumin, and ground ginger. Cook for an additional 2 minutes to allow the spices to become fragrant.
  • Add the pumpkin puree, chicken broth, and coconut milk to the pot. Stir well to combine all ingredients.
  • Bring the mixture to a simmer, cover, and let it cook for 15-20 minutes to allow the flavors to meld together.
  • Once heated through, taste and adjust seasoning with salt and pepper as needed.
  • Serve the soup in bowls, spooning in cooked rice into each serving. Garnish with fresh cilantro if desired.

Notes

This soup freezes well, so you can store leftovers for future meals.
Feel free to add vegetables like spinach or kale for extra nutrition and color.
Adjust the spice level by adding chili powder or fresh chilies if you like it spicy.
