Ingredients
  

  • 2 cups rolled oats
  • 1 cup nuts (almonds, walnuts, or pistachios), chopped
  • 1/2 cup seeds (pumpkin seeds or sunflower seeds)
  • 1/3 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon (optional)
  • 1 cup dried fruit (raisins, cranberries, or apricots), added after baking

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine rolled oats, chopped nuts, and seeds.
  • In a small bowl, whisk together the melted coconut oil, honey or maple syrup, vanilla extract, salt, and cinnamon (if using).
  • Pour the wet mixture over the oat mixture and stir until well combined. Ensure the oats and nuts are evenly coated.
  • Spread the mixture evenly onto the prepared baking sheet.
  • Bake in the preheated oven for 20-25 minutes, stirring halfway through to ensure even browning. The granola should be golden brown when done.
  • Once baked, remove from the oven and allow it to cool completely on the baking sheet. The granola will become crunchy as it cools.
  • Once cooled, stir in the dried fruit and store the granola in an airtight container.

Notes

Feel free to customize your granola by using different nuts, seeds, or spices to suit your taste preferences.
For added sweetness, you can mix in a tablespoon or two of brown sugar or more honey/maple syrup before baking.
This granola can last for up to two weeks if stored properly in an airtight container. Enjoy it on yogurt, with milk, or plain as a snack!
