Tamales are a traditional Mexican dish made of masa (corn dough) filled with various ingredients, wrapped in corn husks, and steamed. This recipe features a classic pork filling, but tamales can be easily adapted with different meats or vegetarian options.

Equipment

  • 1 large mixing bowl
  • 1 kitchen scale (optional)
  • 1 corn husks (soaked in water)
  • 1 steamer pot or tamale steamer
  • 1 spoon for filling
  • 1 plastic wrap or damp cloth

Ingredients
  

  • 4 cups masa harina corn flour
  • 1 cup vegetable shortening
  • 1 teaspoon baking powder
  • 2 teaspoons salt
  • 3 to 4 cups chicken broth adjust for consistency
  • 2 cups cooked and shredded pork
  • 1 cup red chili sauce homemade or store-bought
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt

Instructions
 

  • Soak the corn husks in warm water for about 30 minutes to make them pliable.
  • In a large mixing bowl, beat the vegetable shortening with a hand mixer until fluffy.
  • Gradually add masa harina, baking powder, and salt, mixing well before slowly adding chicken broth until the dough is spreadable.
  • In another bowl, combine the shredded pork, red chili sauce, cumin, garlic powder, and salt to make the filling. Adjust seasoning to taste.
  • Remove a corn husk from the water, shake off excess water, and lay it flat with the pointed end facing away.
  • Spread about ΒΌ cup of masa dough onto the bottom two-thirds of the husk, leaving space at the edges.
  • Add 2 tablespoons of the pork filling on top of the masa.
  • Fold the sides of the husk over the masa and filling, then fold the bottom of the husk up to close it.
  • Repeat the process with the remaining husks, masa, and filling.
  • In a large steamer pot, place the tamales upright. Add water to the pot, ensuring it doesn't touch the tamales, cover and steam over medium heat for about 90 minutes.
  • Allow the tamales to cool slightly before serving.

Notes

You can vary the filling based on your preference; chicken, cheese, vegetables, or sweet fillings can also be used.
Serve with additional red chili sauce or salsa for added flavor. Enjoy your homemade tamales!
