Ingredients
  

  • 1 pound ground beef (or turkey)
  • 1 medium onion, chopped
  • 1 medium bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes (with juice)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup cornmeal
  • 1 cup buttermilk (or milk)
  • 1 large egg
  • 1/2 teaspoon baking powder
  • 1 tablespoon sugar (optional)

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a large skillet over medium heat, cook the ground beef, onion, bell pepper, and garlic until the meat is browned and the vegetables are tender, about 5-7 minutes. Drain any excess fat.
  • Stir in the black beans, corn, diced tomatoes (with juice), chili powder, cumin, salt, and black pepper. Let simmer for about 5 minutes.
  • In a mixing bowl, combine the cornmeal, buttermilk, egg, baking powder, and sugar (if using) until just mixed.
  • Spread the meat mixture evenly in the bottom of a greased 9x13 inch baking dish. Pour the cornbread batter over the top, spreading evenly.
  • Sprinkle the shredded cheese on top of the cornbread batter.
  • Bake in the preheated oven for 25-30 minutes, or until the cornbread is golden brown and a toothpick inserted in the center comes out clean.
  • Let the tamale pie cool for a few minutes before slicing and serving.

Notes

You can customize this dish by adding jalapeños for spice or different vegetables based on your preference.
Leftovers can be stored in the refrigerator for up to 3 days and can be reheated in the oven or microwave.
For a vegetarian version, substitute ground beef with a plant-based meat alternative and add more beans or vegetables.
