Ingredients
  

  • 8 ounces elbow macaroni about 2 cups
  • 1 pound ground beef or turkey
  • 1 tablespoon olive oil
  • 1 packet taco seasoning about 1 ounce
  • 1 cup diced tomatoes with juice
  • 1 cup black beans rinsed and drained
  • 2 cups shredded cheddar cheese divided, about 8 ounces
  • 1 cup milk
  • 1/2 cup sour cream
  • to taste salt
  • to taste pepper
  • optional toppings chopped cilantro, diced avocado, sliced jalapeños, or crushed tortilla chips

Instructions
 

  • In a large pot, bring salted water to a boil. Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
  • In a large skillet over medium heat, add olive oil and ground beef (or turkey). Cook until browned, breaking it up with a wooden spoon, about 5-7 minutes.
  • Stir in the taco seasoning and cook for another minute. Add the diced tomatoes and black beans to the skillet and mix well. Let it simmer for about 5 minutes.
  • Reduce the heat and add the cooked macaroni to the skillet. Stir in 1 1/2 cups of shredded cheddar cheese, milk, and sour cream. Mix until everything is well combined and the cheese is melted.
  • Taste and season with salt and pepper as needed.
  • If desired, transfer the mixture to a baking dish, top with remaining cheddar cheese, and bake at 350°F (175°C) for 10-15 minutes until bubbly and golden.
  • Serve hot with optional toppings of your choice.

Notes

You can substitute ground meat with a plant-based version for a vegetarian option.
Prepare this dish ahead of time and reheat when ready to serve.
For extra spice, add a dash of hot sauce to the mix or use spicy taco seasoning.
