- 2 medium sweet potatoes, peeled and diced Approximately 2 cups.
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 14.5 ounces diced tomatoes, undrained 1 can.
- 2 cups kale or spinach, chopped
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- to taste salt and pepper
- 2 tablespoons olive oil

Heat olive oil in a large pot over medium heat. Add the sliced sausage and cook until browned, about 5 minutes.
Add the chopped onion and minced garlic to the pot. Cook for another 3-4 minutes until the onion is translucent and fragrant.
Stir in the diced sweet potatoes, smoked paprika, ground cumin, salt, and pepper. Cook for 2 minutes.
Pour in the chicken broth and canned tomatoes (with their juices). Bring to a boil.
Reduce heat and let simmer for 15-20 minutes, or until sweet potatoes are tender.
Add the chopped kale or spinach to the pot and cook for an additional 5 minutes until wilted.
