Ingredients
  

  • 8 slices thick bread (e.g., challah or brioche)
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 cup strawberries, sliced (or your choice of fruit)
  • 4 tablespoons butter (for cooking)
  • to taste maple syrup (for serving)

Instructions
 

  • In a mixing bowl, combine the cream cheese and powdered sugar. Mix until smooth and creamy. Fold in the sliced strawberries. Set aside.
  • In another bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.
  • Take two slices of bread and spread a generous amount of the cream cheese mixture on one slice. Top with the other slice to make a sandwich. Repeat with the remaining bread.
  • Heat a frying pan or griddle over medium heat and melt 1 tablespoon of butter.
  • Dip each stuffed sandwich into the egg mixture, making sure to coat both sides.
  • Place the sandwiches in the hot pan and cook for about 3-4 minutes on each side, or until golden brown and cooked through. Add more butter as needed for cooking.
  • Once cooked, transfer the stuffed French toast to a plate and serve warm, drizzled with maple syrup.

Notes

Feel free to experiment with different fillings, such as Nutella, peanut butter, or other fruits.
You can keep the finished French toast warm in an oven set to low heat while you cook the remaining sandwiches.
Pair with fresh fruit or whipped cream for added flavor.
