Ingredients
  

  • 6 cups fresh spinach leaves About 180g.
  • 2 cups strawberries, hulled and sliced About 300g.
  • 1/2 cup red onion, thinly sliced About 75g.
  • 1/2 cup pecans, chopped About 60g. Can substitute with walnuts or almonds.
  • 1/4 cup feta cheese, crumbled About 30g.
  • 1/4 cup balsamic vinaigrette dressing About 60ml. Add just before serving.

Instructions
 

  • Rinse the fresh spinach leaves thoroughly under cold water and drain well. Tear any large leaves into smaller pieces and place them in a large salad bowl.
  • Hull and slice the strawberries, then add them to the bowl with the spinach.
  • Thinly slice the red onion and sprinkle it over the salad.
  • Chop the pecans coarsely and add them to the salad mixture.
  • Sprinkle the crumbled feta cheese on top of the salad.
  • In a small bowl, whisk together the balsamic vinaigrette dressing. Adjust to taste if needed.
  • Pour the vinaigrette over the salad just before serving, and gently toss everything together to combine.

Notes

For added protein, consider adding grilled chicken or chickpeas to make the salad more filling.
This salad can be prepared in advance; however, for the best texture and freshness, it is recommended to add the dressing only right before serving.
Feel free to substitute pecans with walnuts or almonds, based on your preference.
