In a medium saucepan, combine 1 cup of balsamic vinegar and 2 tablespoons of honey. Bring the mixture to a simmer over medium heat, stirring occasionally.
Let the balsamic vinegar simmer for about 15-20 minutes, or until it has reduced by half and has thickened slightly. Remove from heat and allow it to cool while preparing the bruschetta.
Preheat your oven to 400°F (200°C).
Slice the French baguette into ½-inch thick slices and place them on a baking sheet.
Brush each slice with olive oil and season with a little salt and black pepper.
Bake the bread in the preheated oven for about 8-10 minutes, or until it is golden brown and crispy.
In a small bowl, mix the ricotta cheese with the chopped fresh basil, a pinch of salt, and black pepper.
Once the bread is ready, remove it from the oven and let it cool slightly.
Spread a generous portion of the ricotta mixture on each toasted bread slice.
Top with sliced strawberries and drizzle the homemade balsamic reduction over the top.
Garnish with additional basil leaves if desired. Serve immediately and enjoy!
