Preheat your oven to 375°F (190°C). Grease the muffin tin or line it with paper liners.
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
In another bowl, combine the melted butter, milk, eggs, and vanilla extract. Whisk until smooth.
Pour the wet ingredients into the dry ingredients. Mix gently with a rubber spatula until just combined (don’t overmix).
Fold in the chopped strawberries gently to distribute them evenly throughout the batter.
Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted in the center of a muffin comes out clean.
Remove from the oven and allow the muffins to cool in the tin for about 5 minutes before transferring them to a cooling rack.
For a sweeter muffin, consider adding a sprinkle of sugar on top before baking.
