Ingredients
  

  • 8 slices thick bread (e.g., brioche or challah)
  • 1 cup fresh strawberries, sliced
  • 1 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1/2 cup milk
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter (for cooking)
  • to taste maple syrup (for serving)

Instructions
 

  • In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and well combined. Set aside.
  • Spread a generous layer of the cream cheese mixture on four slices of bread, and top with sliced strawberries. Place the remaining four slices on top to create sandwiches.
  • In another mixing bowl, whisk together the eggs, milk, and ground cinnamon until fully blended.
  • Heat a non-stick skillet or griddle over medium heat and add one tablespoon of butter.
  • Dip each sandwich in the egg mixture, ensuring both sides are well-coated.
  • Place the sandwiches in the skillet once the butter is melted and sizzling. Cook for 3-4 minutes on each side, or until golden brown. Add more butter as needed for cooking.
  • Remove the French toast from the skillet and serve warm, drizzled with maple syrup and extra strawberries, if desired.

Notes

You can substitute strawberries with other berries like blueberries or raspberries for variety.
For a richer flavor, consider adding orange zest to the cream cheese filling.
This dish is best enjoyed fresh but can be reheated briefly in a toaster for later servings.
