Preheat the oven to 325°F (160°C).
In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined.
Press the mixture into the bottom of a 9-inch springform pan to form an even crust.
In another bowl, beat the softened cream cheese with an electric mixer until smooth.
Gradually add the sugar and continue to beat until creamy.
Add the vanilla extract and mix until incorporated.
Add the eggs one at a time, mixing after each addition until just blended. Avoid overmixing.
Fold in the sour cream using a rubber spatula, ensuring the mixture is well combined.
Pour the cream cheese mixture over the crust in the springform pan, smoothing the top.
Place the springform pan on a baking sheet to catch any drips.
Bake in the preheated oven for about 60 minutes or until the center is set and a slight jiggle remains.
Once done, turn off the oven, crack the door, and let the cheesecake cool in the oven for about 1 hour to prevent cracking.
After cooling, refrigerate the cheesecake for at least 4 hours, preferably overnight.
Before serving, top with sliced strawberries and drizzle with strawberry glaze or jelly.
