Ingredients
  

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 3/4 cup milk
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 large banana sliced
  • 1 cup fresh strawberries hulled and halved
  • Maple syrup for serving

Instructions
 

  • In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Whisk together until well-mixed.
  • In a separate bowl, beat the egg and then add milk, melted butter, and vanilla extract. Mix until combined.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined (a few lumps are okay).
  • Preheat a non-stick skillet or griddle over medium heat. Lightly grease the surface if necessary.
  • Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 2 minutes until golden brown. Repeat until all the batter is used.
  • Allow pancakes to cool slightly before cutting them into quarters.
  • On each skewer, thread a piece of pancake, a slice of banana, and a half strawberry, alternating until the skewer is filled.
  • Repeat until all pancakes and fruit are used up.
  • Serve with maple syrup drizzled over the top or on the side for dipping.

Notes

You can customize the skewers with other fruits like blueberries or peaches.
If using wooden skewers, soak them in water for 30 minutes before using to prevent burning.
For added flavor, consider mixing a pinch of cinnamon into the pancake batter.
