Ingredients
  

  • 12 ounces pasta spaghetti or your choice
  • 8 ounces fresh spinach
  • 8 ounces mushrooms sliced
  • 3 cloves garlic minced
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes optional
  • 1/2 cup grated Parmesan cheese for serving

Instructions
 

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of cooking water, then drain the pasta in a colander.
  • While the pasta cooks, heat olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.
  • Add the sliced mushrooms to the skillet and cook for about 5-7 minutes, or until they are tender and golden brown. Stir occasionally.
  • Add the fresh spinach to the skillet and cook for about 2-3 minutes, until wilted. Season with salt, black pepper, and red pepper flakes (if using).
  • Once the pasta is cooked and drained, add it to the skillet with the spinach and mushrooms. Pour in the reserved pasta water and toss everything together until well combined. Adjust the seasoning to taste.
  • Serve the pasta hot, topped with grated Parmesan cheese.

Notes

Feel free to add protein such as grilled chicken or shrimp for a more filling meal.
You can substitute the mushrooms with other vegetables such as zucchini or bell peppers, based on your preference.
This dish can be easily made vegan by omitting the Parmesan or using a vegan cheese alternative.
