Ingredients
  

  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded cheese cheddar, feta, or your choice.
  • 1/4 cup milk any kind
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup diced bell peppers optional
  • 1/4 cup cooked bacon optional for added flavor

Instructions
 

  • Preheat your oven to 350°F (175°C) and lightly grease a muffin tin with cooking spray or olive oil.
  • In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
  • Stir in the chopped spinach and shredded cheese. If using, add the optional ingredients like bell peppers or bacon at this stage.
  • Pour the egg mixture evenly into the prepared muffin tin, filling each cup about three-quarters full.
  • Bake in the preheated oven for 18-20 minutes, or until the egg bites are set and slightly golden on top.
  • Remove the muffin tin from the oven and allow the egg bites to cool for a few minutes before carefully removing them.
  • You can use a butter knife to help lift the egg bites out if necessary.

Notes

These egg bites can be stored in an airtight container in the refrigerator for up to a week.
Reheat in the microwave for 15-30 seconds before serving.
