  • 3 tablespoons apple cider vinegar adds a nice tang
  • 2 tablespoons orange marmalade gives a sweet citrus pop
  • 1/4 teaspoon salt to season everything
  • 1/4 teaspoon pepper to season everything
  • 4 cups baby spinach fresh and packed with vitamins
  • 1 cup cooked quinoa cooled, nice and fluffy
  • 1 pear cored and sliced, juicy and crisp
  • 2 mandarin oranges peeled and segmented for citrus flavor
  • 1/2 cup walnuts roughly chopped, for texture
  • 1/2 cup crumbled blue cheese or gorgonzola optional but tangy

  • Whisk the olive oil, apple cider vinegar, orange marmalade, salt, and pepper in a large bowl to make the dressing.
  • Toss in the baby spinach and cooled quinoa, mixing gently.
  • Add the pear slices and mandarin orange segments, mixing gently to combine.
  • Top with roughly chopped walnuts and, if desired, crumbled blue cheese or gorgonzola.

Notes

Use pre-cooked quinoa to reduce prep time. Experiment with different fruits for unique flavors.
