Whisk the olive oil, apple cider vinegar, orange marmalade, salt, and pepper in a large bowl to make the dressing.
Toss in the baby spinach and cooled quinoa, mixing gently.
Add the pear slices and mandarin orange segments, mixing gently to combine.
Top with roughly chopped walnuts and, if desired, crumbled blue cheese or gorgonzola.
Notes
Use pre-cooked quinoa to reduce prep time. Experiment with different fruits for unique flavors.
