Equipment

  • 1 Pressure Cooker for high pressure cooking

Ingredients

Main ingredients

  • 1 small white or yellow onion very finely chopped
  • 1 tablespoon Turkish red pepper paste biber salçası, see note
  • 1 tablespoon double concentrated tomato paste
  • 4 medium ripe tomatoes halved, seeds removed and very finely chopped
  • 2-3 small hot green peppers like serrano or jalapeno, seeds removed and very finely chopped
  • 1/4 cup parsley finely chopped
  • 1 tablespoon fresh mint leaves finely chopped
  • 2 tablespoons extra virgin olive oil
  • 1/2 lemon juiced
  • Kosher salt to season
  • Freshly ground black pepper to season
  • 2 tablespoons roughly chopped walnuts optional for crunch

Instructions

Instructions

  • Toss finely chopped onion, Turkish red pepper paste, and tomato paste into a large bowl. Mix well so that paste coats the onion.
  • Add finely chopped tomatoes and hot green peppers. Stir in fresh parsley and mint, then drizzle with olive oil and lemon juice.
  • Season with kosher salt and freshly ground black pepper. Mix so everything is combined.
  • Pour mix into pressure cooker, seal with ring, lock lid, and cook at high pressure for a few minutes. Quick-release to keep herbs fresh.
  • Open lid carefully, toss in chopped walnuts if using, and give a gentle stir before serving.

Notes

Serve as a side or alongside kebabs for an authentic Turkish dining experience. Adjust heat level by varying the peppers used.
