Ingredients
  

  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes optional
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1/2 cup shredded Gruyère cheese for topping
  • Fresh parsley, chopped for garnish

Instructions
 

  • In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, grated Parmesan cheese, minced garlic, salt, black pepper, thyme, and red pepper flakes. Mix until just combined; do not overmix.
  • Form the mixture into meatballs, about 1.5 inches in diameter. Place the meatballs in the slow cooker.
  • In a separate bowl, mix the beef broth, Worcestershire sauce, and soy sauce. Pour this mixture over the meatballs in the slow cooker.
  • Layer the sliced onions over the meatballs.
  • Cover and cook on low for 6 hours, or on high for 3 hours, until the meatballs are cooked through and tender.
  • About 15 minutes before serving, remove the lid and sprinkle Gruyère cheese over the top of the meatballs. Cover again and allow the cheese to melt.
  • Once done, serve the meatballs hot, garnished with chopped parsley. Enjoy!

Notes

You can use ground turkey or chicken for a lighter option.
Serve with crusty bread or over egg noodles for a complete meal.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat before serving.
