- 1 pound ground beef
- 2 cups uncooked elbow macaroni
- 1 cup chopped onion
- 1 cup chopped bell pepper
- 2 cloves garlic, minced
- 1 can (15 ounces) tomato sauce
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1/4 cup grated Parmesan cheese (for topping)
Preheat the oven to 350°F (175°C).
In a large skillet over medium heat, cook the ground beef until it is browned, breaking it apart as it cooks. Drain any excess fat.
Add the chopped onion, bell pepper, and minced garlic to the skillet. Cook for another 5 minutes until the vegetables are softened.
In a separate pot, cook the elbow macaroni according to package instructions. Drain and set aside.
Remove the skillet from heat and stir in the tomato sauce, sour cream, cooked macaroni, salt, pepper, and Italian seasoning until well combined.
Transfer the mixture to a greased casserole dish, spreading it evenly.
Sprinkle the shredded cheddar cheese and grated Parmesan cheese on top of the casserole.
Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
Remove from the oven and let it cool for a few minutes before serving.
Feel free to add your favorite vegetables to the casserole, such as mushrooms or spinach.
This casserole can be made ahead of time and stored in the refrigerator. Just reheat in the oven before serving.
You can substitute ground beef with ground turkey or chicken for a lighter option.
