Ingredients
  

  • 8 oz spaghetti or linguine
  • 1 lb large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes Adjust to taste.
  • 1/2 cup dry white wine
  • Juice of 1 lemon
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1/4 cup fresh parsley, chopped
  • Grated Parmesan cheese for serving (optional)

Instructions
 

  • Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Reserve 1 cup of the pasta water, then drain the pasta in a colander.
  • While the pasta is cooking, heat the butter and olive oil in a skillet over medium heat. Once the butter has melted, add the minced garlic and red pepper flakes. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.
  • Add the shrimp to the skillet and cook for about 2-3 minutes on one side until they turn pink. Flip the shrimp and cook for another 2 minutes until cooked through.
  • Pour in the dry white wine and lemon juice. Stir to combine and allow the sauce to simmer for about 2-3 minutes, allowing the flavors to meld. Season with salt and freshly ground black pepper to taste.
  • Add the drained pasta into the skillet with the shrimp and sauce. Toss the pasta to coat evenly, adding some reserved pasta water if the dish seems dry.
  • Sprinkle the chopped parsley over the pasta and give it a final toss. Serve immediately with grated Parmesan cheese, if desired.

Notes

You can substitute shrimp with scallops or chicken if preferred.
Adjust the red pepper flakes according to your spice level preference.
