- 1 lb shrimp, peeled and deveined
- 1 cup homemade or store-bought pesto
- 2 tbsp olive oil
- 4 cloves garlic, minced
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving optional
- Fresh basil leaves, for garnish optional
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve ½ cup of pasta water, then drain the pasta in a colander.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
Add the shrimp to the skillet, seasoning with salt and pepper. Cook the shrimp for about 2-3 minutes on each side, or until they turn pink and opaque.
Once the shrimp is cooked, reduce the heat to low and stir in the pesto, mixing it well with the shrimp. If needed, add reserved pasta water a little at a time to achieve a creamy consistency.
Add the drained pasta to the skillet, tossing it with the shrimp and pesto mixture until fully combined. Cook for an additional 1-2 minutes to warm through.
Serve immediately in a large bowl. Top with grated Parmesan cheese and fresh basil leaves if desired.
