- 1 lemon juice of
In a medium saucepan, bring 4 cups of salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until it becomes translucent.
Add the minced garlic, diced red bell pepper, and zucchini to the skillet. Cook for another 4-5 minutes, stirring occasionally until the vegetables are tender.
Push the vegetables to one side of the skillet and add the shrimp. Season with oregano, salt, and black pepper. Cook the shrimp for about 2-3 minutes on each side until they turn pink and opaque.
Gently fold in the halved cherry tomatoes and the cooked orzo. Mix everything together and heat through for an additional 2 minutes.
Remove from heat and stir in the fresh parsley and lemon juice before serving.
For added flavor, consider including a splash of white wine after cooking the shrimp for a richer sauce.
You can substitute shrimp with cooked chicken or vegetables for a vegetarian version.
