Ingredients
  

  • 8 ounces rice noodles or egg noodles
  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1 bell pepper sliced (red or green)
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions
 

  • Begin by cooking the noodles according to the package instructions. Drain and set aside.
  • In a large skillet or wok, heat the vegetable oil over medium-high heat.
  • Add the minced garlic and sauté for about 30 seconds until fragrant.
  • Add the shrimp to the skillet and cook for 3-4 minutes, or until they turn pink and are fully cooked. Remove the shrimp from the skillet and set aside.
  • In the same skillet, add the sliced bell pepper, broccoli florets, and snap peas. Stir-fry for 3-4 minutes until vegetables are tender but still crisp.
  • Add the cooked shrimp back to the skillet along with the cooked noodles.
  • Pour in the soy sauce, oyster sauce, and sesame oil. Toss everything together using tongs or a spatula until well combined and heated through.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with chopped green onions.

Notes

You can substitute the vegetables with any of your favorites, such as carrots or zucchini.
For added heat, consider adding chili flakes or sriracha to the dish.
This recipe can easily be made gluten-free by using gluten-free noodles and tamari instead of soy sauce.
