1 baking sheet
1 non-stick frying pan
1 mixing bowl
1 cooking spatula
1 grater for cheese
1 serving platter
- 12 ounces shrimp, peeled and deveined
- 8 ounces tortilla chips
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream
- 1/2 cup pico de gallo
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- salt and pepper to taste
- fresh cilantro for garnish (optional)
- jalapeños for garnish (optional)
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the shrimp, minced garlic, olive oil, chili powder, cumin, salt, and pepper. Toss until shrimp are evenly coated.
Heat a non-stick frying pan over medium heat. Add the seasoned shrimp and cook for about 3-5 minutes, or until they are pink and opaque. Remove from heat and set aside.
On a baking sheet, spread out the tortilla chips in an even layer.
Sprinkle the cooked shrimp evenly over the tortilla chips, followed by the shredded cheddar and Monterey Jack cheese.
Place the baking sheet in the preheated oven and bake for about 5-7 minutes, or until the cheese is melted and bubbly.
Remove from the oven and top the nachos with pico de gallo, sour cream, and any additional toppings like jalapeños or cilantro if desired.
Serve immediately on a platter with extra sour cream and pico de gallo on the side.
You can customize the heat level by adding diced jalapeños or spicy salsa.
Feel free to use pre-cooked shrimp for a quicker preparation time.
For a vegetarian version, substitute shrimp with black beans or roasted vegetables.
