Ingredients
  

  • 8 oz lo mein noodles
  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons vegetable oil
  • 2 cups mixed vegetables (bell peppers, carrots, snap peas) Feel free to customize based on preference.
  • 3 cloves garlic, minced
  • 2 stalks green onions, sliced
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • to taste salt and pepper Season to taste.

Instructions
 

  • Bring a large pot of water to a boil. Cook the lo mein noodles according to package instructions, usually about 5-7 minutes. Drain and rinse under cold water; set aside.
  • In a wok or large skillet, heat the vegetable oil over medium-high heat. Add the minced garlic and stir-fry for about 30 seconds until fragrant.
  • Add the shrimp to the pan and stir-fry for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the pan and set aside.
  • In the same pan, add the mixed vegetables and stir-fry for 2-3 minutes until they are tender-crisp.
  • Return the shrimp to the pan, then add the lo mein noodles. Pour in the soy sauce, oyster sauce (if using), and sesame oil. Toss everything together until well combined and heated through.
  • Season with salt and pepper to taste, and add the sliced green onions. Give another quick toss.
  • Serve hot and enjoy your Shrimp Lo Mein!

Notes

Feel free to customize the mixed vegetables based on your preferences or what you have on hand.
For extra flavor, you can add a tablespoon of ginger or a dash of chili sauce for heat.
