- 1 lb shrimp, peeled and deveined
- 1 tablespoon vegetable oil
- 1 clove garlic, minced
- 1 tablespoon ginger, minced
- 1 each bell pepper, diced
- 1 medium carrot, shredded
- 1/4 cup green onions, chopped
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 head iceberg lettuce, separated into large leaves
- optional toppings: chopped peanuts, cilantro, lime wedges
Heat the vegetable oil in a large skillet over medium-high heat.
Add minced garlic and ginger to the skillet, sautéing for about 1 minute until fragrant.
Add the shrimp to the skillet and cook for 3-4 minutes until they turn pink and are cooked through.
Stir in the diced bell pepper and shredded carrot, cooking for another 2-3 minutes until the vegetables are tender.
In a mixing bowl, whisk together soy sauce, rice vinegar, and sesame oil. Pour this mixture into the skillet and toss well to coat the shrimp and vegetables.
Remove from heat and stir in chopped green onions.
