Ingredients
  

  • 1 pound gnocchi
  • 1 pound shrimp, peeled and deveined
  • 3 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream For a lighter version, substitute with half-and-half or a non-dairy alternative.
  • 1 teaspoon lemon juice
  • 1 cup spinach leaves, fresh
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese For best flavor, freshly grated is recommended.
  • to taste fresh parsley, chopped For garnish.

Instructions
 

  • Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the top. Drain and set aside.
  • In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1-2 minutes until fragrant.
  • Add the shrimp to the skillet and cook for 3-4 minutes, stirring occasionally, until they are pink and cooked through.
  • Reduce the heat to low and stir in the heavy cream, lemon juice, salt, and black pepper. Allow the sauce to simmer for about 2 minutes, then add the fresh spinach and cook until wilted.
  • Add the cooked gnocchi to the skillet and gently toss to combine with the sauce. Sprinkle grated Parmesan cheese over the top and stir until melted.
  • Serve immediately, garnished with fresh parsley if desired.

Notes

Feel free to add other vegetables such as cherry tomatoes or bell peppers for additional flavor and texture.
For a lighter version, you can substitute the heavy cream with half-and-half or a non-dairy alternative.
This dish is best enjoyed fresh but can be stored in the fridge for a day, reheating on the stovetop.
