Ingredients
  

  • 1 lb medium shrimp, peeled and deveined
  • 1 cup cream cheese, softened
  • 1 cup shredded Monterey Jack cheese
  • 1 cup enchilada sauce Plus more for topping
  • 8 small flour tortillas
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tbsp olive oil
  • to taste none Salt and pepper

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat olive oil over medium heat. Add diced onion and cook for about 3-4 minutes until softened.
  • Add minced garlic, cumin, and chili powder to the skillet. Stir for another minute until fragrant.
  • Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes. Season with salt and pepper to taste. Remove from heat.
  • In a mixing bowl, combine cream cheese, shredded Monterey Jack cheese, and 1 cup of enchilada sauce. Fold in the cooked shrimp mixture.
  • Warm the flour tortillas slightly, so they are easier to roll. Spoon a generous amount of the shrimp mixture onto each tortilla and roll them up tightly.
  • Place the rolled enchiladas seam-side down in a baking dish. Pour additional enchilada sauce over the top, ensuring they are well-coated.
  • Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, until the cheese is bubbly and golden.
  • Once done, let them cool for a few minutes. Garnish with fresh cilantro if desired before serving.

Notes

You can use pre-cooked shrimp to save time.
Feel free to add additional toppings like diced avocado, sour cream, or chopped green onions before serving.
To make the dish spicier, add jalapeños or hot sauce to the filling or sauce.
