Equipment

  • 1 mixing bowl
  • 1 measuring cups and spoons
  • 1 cutting board
  • 1 aluminum foil or parchment paper optional, for wrapping

Ingredients
  

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt
  • to taste pepper
  • 4 large flour tortillas
  • 1 cup cooked brown rice
  • 1 cup black beans, rinsed and drained
  • 1 cup diced tomatoes
  • 1 unit avocado, sliced
  • 1 cup shredded lettuce
  • 1 cup shredded cheese (cheddar or your choice)
  • for serving lime wedges

Instructions
 

  • In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the shrimp.
  • Sprinkle the cumin, paprika, garlic powder, onion powder, salt, and pepper over the shrimp. Stir to combine and cook for 3-5 minutes, or until the shrimp are pink and cooked through. Remove from heat.
  • Lay a flour tortilla flat on a clean surface. In the center of the tortilla, layer 1/4 cup of the cooked brown rice, 1/4 cup of black beans, a couple of spoonfuls of diced tomatoes, some avocado slices, a handful of shredded lettuce, and a sprinkle of shredded cheese.
  • Top the fillings with a few shrimp from the skillet.
  • Fold up the sides of the tortilla, then roll from the bottom up to encase the fillings. Repeat for the remaining tortillas.
  • If desired, wrap each burrito in aluminum foil or parchment paper for easier handling.
  • Serve with lime wedges and enjoy your delicious shrimp burritos!

Notes

You can customize your burrito by adding other toppings such as sour cream, salsa, or jalapeƱos.
If you prefer, you can grill the burritos for a few minutes on each side for a crispy texture.
