  • 1 measuring cups and spoons
  • 1 lid for the skillet

Ingredients
  

  • 1 pound shrimp, peeled and deveined
  • 1 cup long-grain rice
  • 2 cups chicken broth or water
  • 1 medium onion, diced
  • 1 cup bell pepper, diced Any color.
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper Optional for heat.
  • Salt and pepper To taste.
  • 2 tablespoons olive oil
  • Fresh parsley or cilantro For garnish (optional).

Instructions
 

  • Heat the olive oil in a large skillet over medium heat.
  • Add the diced onion and bell pepper, cooking for about 5 minutes or until softened.
  • Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  • Add the rice to the skillet, stirring to combine it with the vegetables. Cook for 2 minutes to toast the rice slightly.
  • Pour in the chicken broth (or water) and bring the mixture to a boil. Add the paprika, cayenne pepper (if using), salt, and pepper.
  • Once boiling, reduce heat to low, cover the skillet, and let it simmer for about 15 minutes or until the rice is cooked and liquid is absorbed.
  • After 15 minutes, uncover the skillet and add the shrimp on top of the rice. Cover again and cook for an additional 5 minutes, or until the shrimp are pink and cooked through.
  • Remove from heat and let it sit for a couple of minutes. Fluff the rice with a fork and mix the shrimp in gently.
  • Garnish with fresh parsley or cilantro if desired before serving.

Notes

You can add or substitute other vegetables like peas or corn to enhance the dish.
For added flavor, consider marinating the shrimp in lemon juice, garlic, and herbs for 15-30 minutes before cooking.
