- 1 French baguette 10-12 inches long
- 1 cup shrimp, peeled and deveined
- 2 ripe avocados
- 4 tablespoons butter
- 3 cloves garlic, minced
- 1 tablespoon fresh lemon juice

- to garnish fresh cilantro or parsley, chopped

Preheat your oven to 400°F (200°C).
Slice the French baguette in half lengthwise and place it on a baking sheet.
In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.
Brush the garlic butter mixture generously over the cut sides of the baguette.
Place the bread in the oven and bake for about 5-7 minutes, or until golden and crispy.
While the bread is baking, cook the shrimp in a pan over medium heat. Season with salt and pepper, and cook for 3-4 minutes or until pink and cooked through.
In a mixing bowl, mash the ripe avocados with lemon juice, and season with salt and pepper to taste.
