In a large mixing bowl, toss the cut chicken pieces with cornstarch until evenly coated. Set aside.
Heat vegetable oil in a frying pan or wok over medium-high heat. Add the chicken pieces and cook for about 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the pan and set aside.
In the same pan, reduce the heat to medium and add minced garlic and grated ginger. Sauté for 1 minute until fragrant.
In a small saucepan, combine soy sauce, honey, and sesame oil, stirring well. Bring the mixture to a simmer and let it cook for 2 minutes to thicken slightly.
Add the cooked chicken back into the frying pan, then pour the sauce over the chicken. Toss everything together until the chicken is well-coated in the sauce.
Sprinkle sesame seeds on top and cook for an additional 2-3 minutes, allowing the flavors to meld together.
Remove from heat, garnish with chopped green onions, and serve hot!
