Ingredients
  

  • 1 cup cream cheese 8 ounces.
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup fresh raspberries Plus extra for garnish.
  • 12 mini phyllo pastry cups Store-bought.
  • optional mint leaves For garnish.

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a mixing bowl, combine the cream cheese, powdered sugar, and vanilla extract. Use an electric mixer or whisk to blend until smooth and creamy.
  • Gently fold the raspberries into the cream cheese mixture, being careful not to break them up too much.
  • Place the mini phyllo pastry cups in the muffin tin. Fill each cup with a spoonful of the cream cheese and raspberry mixture.
  • Bake in the preheated oven for about 10 minutes, or until the pastry cups are golden brown and the filling is slightly set.
  • Allow the bites to cool slightly before removing them from the muffin tin.
  • Serve warm or at room temperature, garnished with additional raspberries and mint leaves if desired.

Notes

These bites can be made ahead of time and stored in the refrigerator for up to 3 days. Just reheat them briefly in the oven if desired before serving.
You can replace fresh raspberries with other berries like blueberries or strawberries if you prefer.
Experiment with adding a bit of lemon zest to the filling for added flavor depth.
