Ingredients
  

  • 1 cup quinoa (uncooked) Rinse under cold water before use.
  • 2 tablespoons olive oil
  • ¼ cup honey or maple syrup
  • ½ teaspoon vanilla extract
  • ½ teaspoon salt
  • ¼ cup almonds, chopped
  • ¼ cup walnuts, chopped
  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • ¼ cup dried cranberries (optional) Add after cooling if desired.

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Rinse the quinoa under cold water to remove its natural coating (saponin), which can be bitter.
  • In a mixing bowl, combine the rinsed quinoa, olive oil, honey or maple syrup, vanilla extract, and salt. Mix well until the quinoa is evenly coated.
  • Stir in the chopped almonds, walnuts, pumpkin seeds, and sunflower seeds until everything is well combined.
  • Spread the quinoa mixture evenly on the prepared baking sheet.
  • Bake in the preheated oven for about 15-20 minutes or until the quinoa is golden brown and crunchy. Stir the mixture halfway through to ensure even baking.
  • Remove from the oven and let it cool completely. If desired, mix in the dried cranberries once cooled.
  • Once cooled, break apart any clumps and store the Quinoa Crunch in an airtight container.
