Ingredients
  

  • 4 large eggs
  • 1 cup canned pumpkin puree
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 cup brown sugar
  • 8 slices thick bread (such as brioche or challah)
  • as needed tablespoons butter for cooking
  • optional maple syrup For serving.

Instructions
 

  • In a mixing bowl, whisk together the eggs, pumpkin puree, milk, vanilla extract, cinnamon, nutmeg, ginger, and brown sugar until well combined.
  • Preheat your griddle or skillet over medium heat and add a little butter to coat the surface.
  • Dip each slice of bread into the pumpkin mixture, allowing it to soak for a few seconds on each side. Make sure they are well-coated but not overly soggy.
  • Place the soaked slices on the hot griddle or skillet. Cook for about 4-5 minutes on each side, or until golden brown and cooked through. Flip carefully with a spatula.
  • Remove from heat and repeat with remaining slices, adding more butter to the pan as needed.
  • Serve warm with your choice of toppings such as maple syrup, whipped cream, or chopped pecans.

Notes

You can add a pinch of salt to the pumpkin mixture for enhanced flavor.
For extra indulgence, consider stuffing the bread with cream cheese before dipping it in the pumpkin mixture.
Leftover French toast can be refrigerated and reheated for a quick breakfast treat during the week.
