- 1 loaf French bread, cubed About 16 ounces.
- 1 cup canned pumpkin puree
- 6 large eggs large eggs
- 1 ½ cups milk Whole or milk of choice.
- 1/2 cup brown sugar
- 2 teaspoons vanilla extract
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup chopped pecans or walnuts Optional.
- 1/2 cup maple syrup For serving, optional.
Preheat your oven to 350°F (175°C).
In a large mixing bowl, whisk together the pumpkin puree, eggs, milk, brown sugar, vanilla extract, pumpkin pie spice, cinnamon, and salt until well combined.
Place the cubed French bread into the 9x13-inch baking dish. Pour the pumpkin mixture evenly over the bread cubes, ensuring all pieces are soaked.
If using, sprinkle the chopped nuts over the top of the mixture.
Cover the dish with aluminum foil and refrigerate for at least 30 minutes (or overnight, if preparing ahead).
