- 1 lb prime rib, thinly sliced approximately 500g
- 4 large hoagie rolls or crusty sandwich buns
- 4 slices provolone cheese
- 1 cup sautéed onions approximately 2 large onions
- 1/2 cup horseradish sauce can be adjusted to taste or substituted with mayonnaise
- 2 tablespoons olive oil
- to taste salt and pepper
- optional fresh arugula or spinach for topping
Heat olive oil in a skillet over medium heat. Add the sautéed onions and cook until they are softened and caramelized, about 5-7 minutes. Season with salt and pepper. Remove from heat and set aside.
In the same skillet, add the thinly sliced prime rib and heat through for about 2-3 minutes until warmed. Add a slice of provolone cheese on top to melt (this should take an additional 1-2 minutes).
While the meat is heating, cut the hoagie rolls in half and toast them in the oven or toaster until golden brown.
Spread horseradish sauce on the bottom half of each toasted roll. Then, layer the warm prime rib and melted cheese on top.
Add the caramelized onions over the prime rib, and if desired, a handful of fresh arugula or spinach.
Place the top half of the roll onto the sandwich and press down gently to secure.
Slice the sandwiches in half if desired and serve immediately on a platter.
You can adjust the amount of horseradish sauce to taste or substitute it with mayonnaise for a milder flavor.
