Ingredients
  

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 large red bell pepper, diced
  • 1 large green bell pepper, diced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional) Optional.
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes
  • 2 cups beef broth
  • to taste salt and pepper

Instructions
 

  • Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground beef and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.
  • Add the diced onion, garlic, red bell pepper, and green bell pepper to the pot. Cook for about 5 minutes, or until the vegetables are softened.
  • Stir in the chili powder, cumin, paprika, cayenne pepper (if using), and season with salt and pepper. Cook for an additional 1-2 minutes to toast the spices.
  • Add in the kidney beans, black beans, diced tomatoes with their juices, and beef broth. Stir well to combine all ingredients.
  • Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 30 minutes, stirring occasionally.
  • Taste and adjust seasoning with more salt, pepper, or spices as desired.
  • Serve hot, topped with shredded cheese, sour cream, and chopped green onions if you like.

Notes

For added flavor, you can let the chili sit for a few hours or even overnight before serving. This allows the flavors to deepen. You can also enjoy this chili with cornbread or over rice for a complete meal. Feel free to customize the beans and vegetables based on your preference.
