Equipment

  • 1 mixing bowl
  • 1 whisk

Ingredients
  

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 1 tablespoon melted butter Plus extra for cooking.

Instructions
 

  • In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  • In another bowl, whisk the milk, egg, and melted butter together.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; it's okay if a few lumps remain.
  • Heat a non-stick skillet or frying pan over medium heat. Add a small amount of butter to coat the pan.
  • Pour about 1/4 cup of batter onto the skillet for each pikelet. Cook for about 2-3 minutes or until bubbles form on the surface and the edges start to look set.
  • Flip each pikelet carefully with a spatula and cook for another 1-2 minutes or until golden brown.
  • Repeat with the remaining batter, adding more butter to the pan as needed.
  • Serve warm with your choice of toppings such as maple syrup, fresh fruit, or whipped cream.

You can easily double the recipe to make more servings.
For a twist, add chocolate chips or berries to the batter before cooking.
