  • 1 non-stick skillet or frying pan
  • 1 spatula
  • 1 knife
  • 1 cutting board

Ingredients
  

  • 4 slices sourdough bread or bread of choice.
  • 4 tablespoons basil pesto
  • 4 ounces fresh mozzarella cheese sliced.
  • 2 tablespoons unsalted butter softened.
  • to taste none salt
  • to taste none pepper

Instructions
 

  • Preheat your non-stick skillet over medium heat.
  • Spread 1 tablespoon of basil pesto on one side of each slice of bread.
  • Place two slices of bread, pesto side up, on the cutting board. Layer the mozzarella cheese evenly on top of each slice.
  • Season with a bit of salt and pepper, then top with the other two slices of bread, pesto side down.
  • Spread 1 tablespoon of softened butter on the outer sides of each sandwich.
  • Place the sandwiches in the heated skillet. Cook for about 3-4 minutes on one side until they are golden brown and the cheese starts to melt.
  • Carefully flip the sandwiches using a spatula and cook for another 3-4 minutes on the other side until golden brown and the cheese is fully melted.
  • Remove the sandwiches from the skillet and let them cool for a minute before slicing in half.

Notes

For a extra flavor, add sliced tomatoes or fresh spinach inside the sandwich before grilling.
You can substitute the mozzarella with other cheeses like cheddar or provolone for a different taste.
Serve hot with a side of your favorite dipping sauce or soup for a comforting meal.
