- 4 slices sourdough bread or bread of choice.
- 4 tablespoons basil pesto
- 4 ounces fresh mozzarella cheese sliced.
- 2 tablespoons unsalted butter softened.
- to taste none salt
- to taste none pepper
Preheat your non-stick skillet over medium heat.
Spread 1 tablespoon of basil pesto on one side of each slice of bread.
Place two slices of bread, pesto side up, on the cutting board. Layer the mozzarella cheese evenly on top of each slice.
Season with a bit of salt and pepper, then top with the other two slices of bread, pesto side down.
Spread 1 tablespoon of softened butter on the outer sides of each sandwich.
Place the sandwiches in the heated skillet. Cook for about 3-4 minutes on one side until they are golden brown and the cheese starts to melt.
Carefully flip the sandwiches using a spatula and cook for another 3-4 minutes on the other side until golden brown and the cheese is fully melted.
Remove the sandwiches from the skillet and let them cool for a minute before slicing in half.
For a extra flavor, add sliced tomatoes or fresh spinach inside the sandwich before grilling.
You can substitute the mozzarella with other cheeses like cheddar or provolone for a different taste.
Serve hot with a side of your favorite dipping sauce or soup for a comforting meal.
