peppermint fudge

Equipment

  • 1 double boiler or microwave-safe bowl
  • 1 8-inch square baking pan
  • 1 parchment paper
  • 1 rubber spatula
  • 1 refrigerator

Ingredients
  

  • 2 cups semisweet chocolate chips
  • 1 cup sweetened condensed milk
  • 1 teaspoon peppermint extract For a stronger peppermint flavor, increase by a few drops.
  • 1/2 cup crushed peppermint candies
  • 1/4 cup white chocolate chips For topping (optional).
  • additional amount crushed peppermint candies For topping (optional).

Instructions
 

  • Line the 8-inch square baking pan with parchment paper, leaving some overhang for easy removal.
  • In a double boiler or microwave-safe bowl, combine the semisweet chocolate chips and sweetened condensed milk. If using a microwave, heat in 30-second intervals, stirring in between, until melted and smooth. If using a double boiler, stir until melted.
  • Remove the melted chocolate mixture from heat and stir in the peppermint extract and crushed peppermint candies. Mix until well combined.
  • Pour the fudge mixture into the prepared baking pan. Spread it evenly using a rubber spatula.
  • If desired, melt the white chocolate chips in the microwave and drizzle over the fudge. Sprinkle additional crushed peppermint candies on top for extra crunch and decoration.
  • Refrigerate the fudge for at least 2 hours, or until fully set.
  • Once set, lift the fudge out of the pan using the parchment paper overhang. Cut into squares or rectangles to serve.

Notes

For a stronger peppermint flavor, you can increase the amount of peppermint extract by a few drops.
Store any leftover fudge in an airtight container in the refrigerator for up to one week.
You can experiment with dark chocolate or milk chocolate chips based on your preference.
